Smolt, in collaboration with the University of the Ryukyus, has begun experimental aquaculture using a closed recirculating system to farm cherry salmon (sakuramasu) with enhanced heat tolerance. A closed recirculating system is a land-based aquaculture method in which water is continuously purified and reused within tanks. Smolt has selectively bred cherry salmon over six generations—originally a species that can only reproduce in waters below 18°C—so that they can now grow
